March Phone Dump!










Happy Easter!

Yesterday I barely sat down long enough to catch my breath but today was all about relaxing.  I tried as hard as I could to get us out of the house to “do something”, but they weren’t having it.  Everyone except me wanted to have a relaxing “stay home day” (and apparently my parents house is an extension of home, since we did go there).  The kids were both worn out from yesterday and slept ’til 8:30.  Don’t be jealous though, that’s practically unheard of around here.  Usually if we’re not up and going by 6am, somethings wrong.

Braden couldn’t wait to get downstairs to check out the baskets that the Easter Bunny left.  Poor kid, he could see them as soon as he walked out of his bedroom and was itching to get to them, but we waited for a bit to let Mackenzie wake up on her own.  One thing I have learned in my 4.5 years as a mom is that you never wake a sleeping baby.  Ever.

We got downstairs and the kids tore into their baskets.  Mackenzie was enthralled with her Elmo Easter Egg and Braden couldn’t wait to watch his new movie, “The Guardians”.  I thought it was new, but according to B he’s wanted it for his whole entire life so maybe I was mistaken ;)  My favorite thing from their baskets were the adorable hooded beach towels with their name embroidered on them.  B’s is blue with sharks and M’s is pink with butterflies.  I may have to order a few more, they’re so soft and will definitely get a lot of use around here this summer.

We lazed around for a bit, had breakfast and coffee, then got up and made Broccoli Salad and Angel Lush Cake to take to my parents house.  Our plan was to let the kids swim while my dad grilled ribs, hunt for eggs, eat, and head home.  It was way too cold to get in the pool though.  The weather outside was perfect but the pool was freezing.  Braden did convince Adam to get in for a few minutes with him, but he was shivering so I made him get out.  I know, mean mommy.

Once he dried off and warmed up, we headed outside to hunt for the eggs that the Easter Bunny left.  We always hunt for eggs at my parents house instead of ours.. we have two very big dogs and no matter how diligent we are with our pooper scooping, it never fails that somebody steps in something.  So we just avoid it and have our annual egg hunt at Grandma and Grandpa’s house.

How cute are they?  They sat there together and opened all of their eggs.  Some had stickers in them, which they shared with everyone.. they weren’t sharing their gummies or jelly beans though.  Apparently those are high-value egg fillers to a 4-year-old and 1-year-old.

Grandpa finished grilling and kept Mackenzie entertained ’til it was time to eat.  She didn’t take a nap at all, I guess because she slept so much yesterday?  Thankfully she was in a great mood all day so we didn’t fight to make her lay down.

Broccoli Salad

We have made this a few times and everyone always begs for the recipe. It’s incredibly easy to throw together and seriously delicious. We cut the sugar in half from the original Paula Deen recipe. I love Paula and I have a sweet tooth, but it was way too sweet for us. I also like to use low fat mayo, turkey bacon, and low fat cheese to help make it a bit healthier.  We’ve also used craisins instead of raisins, or a mixture of both.  I think next time I may try adding in some chopped pecans, I love the way they taste with craisins and cheese.

Ingredients:

1 head broccoli
6 to 8 slices cooked bacon, crumbled
1/2 cup chopped red onion
1/2 cup raisins or craisins
8 ounces sharp cheddar, cut into very small chunks
1 cup mayonnaise
2 tablespoons white vinegar
2 tablespoons sugar
1/2 cup halved cherry tomatoes
Salt and freshly ground black pepper

Directions:

Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, onion, raisins/craisins, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.

Weekly Workout Recap: March 24th – March 30th

Starting week two of the “5K Own It” plan from Train Like a Mother.  This week I learned that I’m not a big fan of tempo runs and that running on tired legs is no fun.  I plan to start focusing more on cross training starting next week.

  • Sunday – Rest, recovering from the Bainbridge Half Marathon.
  • Monday – Ran easy 4 miles at 9:51 pace.
  • Tuesday – Rest, planned to run but Adam had an alumni meeting for his fraternity that ran late so I couldn’t.  Perhaps I should buy a jogging stroller so this doesn’t happen!
  • Wednesday – My first tempo run!  I’m not really sure if I had my tempo pace correct, I need to read more about how to determine what my tempo, recovery, warm up, and cool down pace should be.
    1 mile warm up – 10:06
    1 mile tempo – 9:02
    1/2 mile recovery – 10:02
    1 mile tempo – 9:13
    1 mile cool down – 9:56
  • Thursday – Ran 3.13 easy miles at 10:13 pace.  My legs were so tired, this was one of the hardest runs I’ve done in a long time.  I kept looking down at my watch thinking I must be going a lot faster than normal, but I wasn’t.  Perhaps I should have trusted the experts and taken a few days off post-race.  I followed up my run with 30 minutes of yoga, to make up for skipping my workout on Tuesday.  I love yoga and need to do it more often.
  • Friday – Planned to run 3 miles, but after meeting Adam for lunch with the kids, I got an awful stomach bug and was in bed in pain for the rest of the night.
  • Saturday – Planned to run 5 miles, but decided I was taking the rest of the weekend to rest and come back strong on Monday.
